Varonica fixed us Mapo Tofu for dinner. Sichuan spice is often "Ma La" => Ma (麻) = Numb & La (辣) = Spicy which is quite unique from other spices. She used special Chinese Sichuan peppercorn (花椒) hand carried directly from China for us, they were uniquely "numbing" and spicy at the same time. Wikipedia says the numbing is caused by "3% of hydroxy-alpha-sanshool". VERY good, very interesting. The white dish in the picture below is a potato dish called "Potato with Vinegar" possibly Chinese name is 醋溜土豆丝.

Lighting off "small hot air balloons" - these rise and go out over the water until the flame goes out, then sink into the ocean. They are biodegradable.
